Salads
A salad is a dish usually served cold. It may be made from vegetables, fruits or meats. It may be a combination of vegetables and meat. Meat may be chicken, fish, pork or shrimp. It may be made of fruits and vegetables. A salad dressing is always added. Small amounts of other food materials are added to give it flavor. A salad may be cooked or uncooked. It is usually served on a bedding of leaves. The usual leaves used as bedding are lettuce. This bedding is also eaten.

A salad may be served as main dish if it is made of meat. It may be served after the main dish if it is made of vegetables. It may sometimes take the place of dessert if it is made of fruit.

When vegetables are used, the vegetables should always be fresh and crisp. Vegetables in salads are usually raw. Carrots, celery, radish, pepper, cabbage, onions, tomatoes and singkamas are used raw in making salads. Potatoes and beets on the other hand are boiled before they are used for salads.

Salad dressings are of 3 kinds. They are: 1) French dressings, 2) cooked dressing and 3) mayonnaise.
- The simplest dressing for vegetable salads is calamansi juice or vinegar.
- Salad oil is used in French dressing and in mayonnaise. Oil for salad dressings may be olive oil, which is made from olives. Corn or cotton seed oil can also be used.
- Egg yolk is used in making mayonnaise. Eggs are also used in making cooked dressing. The egg and oil used in salad dressing add to its food value.
- Different fruit in season may be made into a delicious mixed salad. Papaya, mango, chico, oranges, banana and pineapple make a good combination for a fruit salad. Just add coconut meat strips and cream. They can be either used raw or bought in fruit cocktail cans.
